O-sashimi no moriawase, お刺身の盛り合わせ、Sashimi spread/assortment, or colloquially knows as o-tsumami (おつまみ、lit: snack). Sashi = 刺し = pierced; Mi = 身 = body/flesh/meat. One of my favorite explanation for the origin of the term sashimi: when the fish is caught, brain is immediately pierced with a spike to paralyze and kill it instantly and placing it on ice. This process is known as ikijime (活け締め、魚を漁獲した後の処理方法を指す語。「〆」の字を用いて「活け〆」、「活き〆」). Ikijime minimizes the release of lactic acid keep the fish fresh and toxic free. When spiked correctly, the fish fins flare and the fish relaxes, immediately ceasing all motion. This method is considered to be the fastest and most humane method of killing fish.
