May is National Egg Month, and I'm partnering with @incredibleegg to share a few of my favorite ways to add eggs to my every day. BEET PICKLED EGGS
1 cup distilled white vinegar
1 cup water
2 tablespoons kosher salt
1/4 cup sugar
1 cup peeled and 1/2"-diced red beets
6 black peppercorns
6 peeled hard-boiled eggs
Combine all ingredients except the eggs in a small saucepan over medium heat, stirring occasionally. Once mixture is hot and the salt and sugar have completely dissolved, remove brine from heat. Place eggs in a glass quart jar. Pour brine over the eggs, secure the lid, and refrigerate for up to 10 days. Enjoy plain with a sprinkle of salt and pepper, halved on fresh salads, or chopped in your egg salad sandwich. Delish! (The eggs in this photo were only in the brine over 1 night. More time in the brine will eventually turn the egg white completely colored.)

#AD By popular demand I find posting these transformation pictures help a lot of people that follow me. Sometimes people need to be reminded that everyone goes through hard times and you can always over come them. I know sometimes it doesn't seem like that but in the end we always look back and think I should of been less hard on myself. Even though I look like a happy white beached whale I was definitely struggling to smile. I think hubby made me laugh. Most of my pictures you can see the pain in my eyes from looking like something I never thought I would see and or from throwing up all day. Either way I was pretty miserable. I decided to take off running when I was given the green light to workout again. Of course I made sure weeks before my diet was on point. Truth is I know how hard it can be and all your insecurities of what to do and not to do. Feeling weak and pathetic that you can't lift a 5lb weight and guilty to leave the little one but it's the process and you just have to walk that path for a little while.
