Tarte Au Chocolate
This is one for the full-on aficionados and appreciators of smooth bitter dark chocolate. (There’s plenty of 100% cacao in here) with Valrhona Guanaja ganache, cocoa nib sable, confiture de lait ice cream.
What this tart is NOT: One of those ubiquitous, hard, butter/chocolate bricks that you might enjoy for about 5 minutes before feeling too full.
Smooth and almost pudding-like in texture dare I say wobbly? Very smooth and easy to eat. Gold sea salt compliments the bitterness of all the chocolate.
