Friday Fakeaway in the form of this Chipotle Chicken Bowl
I used @quorn_uk chicken pieces but it would also work with chicken or tofu and made egg fried cauli rice and steamed kale for the base ⸰
For one serving:
•Sauté your veg of choice, I used onion, mushroom, courgette and red pepper.
•Add the quorn/tofu/chicken (if using chicken cook this first to make sure it's cooked thoroughly).
•Mix 100g chopped tomato, 1 tsp chipotle paste, 1 tsp chopped garlic, 1/2 tsp tumeric, s&p and fresh coriander with 1 tbsp water and add to the veg mixture.
Simmer for 5-10 minutes until the sauce is thick. •Blend 150g cauliflower to form a rice texture and add fresh coriander and diced spring onion. •Sauté in a pan until it begins to brown. Then add 50g egg white, mix thoroughly and cook until the egg white is done.
•Serve the veg on top of the cauli rice with some fresh coriander and guac or yogurt
