Snack attack. Baked not fried fresh corn tortilla chips and simple guac.

Preheat oven to 450
10 corn tortillas cut into quarters
1 tbsp olive oil
1/2 lime juice
Drizzle the olive oil on a parchment paper lined baking sheet the quartered shells on a baking sheet, some may overlap. Squeeze a bit of lime on them,throw some cumin, salt and onion powder on them and bake for 10 minutes, flip and bake another 2-5 minutes. Donezo! Super simple, crunchy and flavorful. Oh and addicting, so keep your oven on and keep cutting tortillas Served these chips with some homemade guac and hummus, they were a hit! Right @albinobowler ??
There's a lot going on in this bowl and it's one of the healthiest and most delicious dinners I've ever made without following a recipe. On the left side: kale salad, massaged with olive oil, lime juice, and avocado, mixed up with some sea salt and nutritional yeast, topped with sliced almonds and a little more avocado. On the right: roasted sweet potato and Brussels sprouts with paprika, sautéed garlic & red onions, all mixed up with a little bit of quinoa and Italian seasonings. I bought all these vegetables the other day in hopes that they would work well together and I'm really pleased that they do. I'll be making this one again, for sure!
