Hey guys! So I’ve been gone for a bit. I was in a situation where I didn’t have much control over what I was eating or any spare cash at all so I gained around 60lbs, and my blood pressure became an issue. Life in general got pretty tough there for a second. Now I’m in a situation where I have full control and funding to eat how I want. My boyfriend and I have been doing low carb, and low sodium (to help with the blood pressure) and I’m happy to say I’ve already lost 10lbs, though I’ve got a long road ahead of me. I’ve also started taking fish oil and apple cider vinegar to help with my blood pressure. It would seem that my love affair with salad has waned lately which for many may seem innocuous at best. Unless you are someone who has a compromised gut microbiome who has spent the better part of 8 years trying to get it back to normal (think IBD). If you remember I decided to give the Ketogenic diet protocol a whirl and things were ticking along swimmingly. Or so I thought. It all started with a missed bowel movement here and there (as in not every day which had been a major milestone for me about a year ago). Then it went from not every day to not every two days which prompted a defcon 4 alarm to start going off in my sometimes theatrical noggin'. This situation definitely required an increase in intelligence and strengthened measures to head this potential issue down.
Now I'm no scientist but I've been studying and researching diet and nutrition for years and using myself as a test subject and here's what I think is causing a failure in my plumbing system: not enough fibre from plant sources and too much dairy because Keto. So defensive measures are in order. Stat! More salad. Less cheese.
There's just one problem, it's so cold here right now the last thing I want is salad due to the fact it has absolutely no warming qualities about it. Unless you add roasted vegetables and toasted seeds that is. So I did. I roasted a butternut squash and toasted a couple handfuls of pumpkin seeds. And, to really change it up instead of the usual balsamic vinaigrette I decided to try a simple olive oil and Apple cider vinegar one with just a bit of Stevia to give it a hint of sweetness.
Say hello to my new favourite salad. Tomorrow I'm going to add roasted Brussels sprouts on there too. I was concerned that the lack of a animal source protein was going to leave me less than sated. So far so good.
Yesterday, I woke up with some slight post nasal dripping going in. Late afternoon yesterday, I ended up taking an unexpected nap and I never take naps that late in the day. The sinus stuff got much worse overnight. So thankful that my husband had planned to take the day off anyway. With him home, I was able to just concentrate on getting healthy again. He even cleaned up the kitchen that I had no energy for whatsoever.
Even after drinking coffee, I desperately needed to get more sleep. My husband kept our son busy so that I could nap. After I woke up, I have been downing tea mixed with honey and a bit of apple cider vinegar. And now, I'm feeling much better.
The only issue now is the effects from having taken some over the counter liquid cold medicine. I have not been able to think straight at all.
