What to do when you wake up and there's no apricot jam for your pancakes? Make some more! Especially when it's this easy to make.
What you need:
1kg of apricots, halved with all but 4 stones removed
800gms of sugar
Place the apricots in a large pot and pour the sugar on top. Leave the sugar and apricots to macerate for at least 30 minutes (if I remember I do it overnight).
Next, bring the mixture to the boil for 5 minutes, making sure it doesn't boil over before bringing it back down to a simmer.
Let the mixture simmer for 10 minutes or until the apricots have almost completely melted.
Place in sterilized jars or in a bowl to serve immediately.
