Venison Lonza - take a nice juicy venison backstrap, cure it and pop it into the curing chamber for some gentle weight loss. The cure included a lot of Korean chilli flakes which make the Lonza smell a bit like Kimchi and gives it a intense deep red colour. Hopefully it will be ready for Xmas feasting.
