Quickest dinner ever has become a simple grab & go lunch today. This quiche/frittata was a result of me not wanting to cook & spend time in the kitchen last night! So easy. Chop whatever you've got on hand into small bits in food processor (I used carrot, zucchini, onion, bacon), mix in several eggs (until there's more egg than veg mix), any seasoning or herbs you'd like (I used salt, pepper, rosemary, and some goats fetta) & poured into a lined or greased pan or glass dish. The bigger the container, the shallower the egg mix, the quicker it cooks. Into a preheated 180°C oven for about half an hour, depending on how deep it is. Go do something else or relax! Keep cooking until it is no longer wobbly. Great served with veggies. I also put a dollop of hummus on top.
