About 1 or 2 days before I have to go to the grocery store I start cleaning out my fridge. Tonight was " Leftover Burrito Night!"I love nights like this because you can do so much with it.
I took some of the leftover quinoa and black beans that we had earlier in the week and made "Quinoa and Black Bean Stuffed Burritos." I had a pack of #simpletruth organic chicken that I separated between two meals, thanks to the tip from my good friend LA, so NOT ONLY dis I make burritos tonight, I also began making "Chicken and White Bean Chilli" for TOMORROW'S DINNER in the crock pot.
Having all the ingredients ready, I went ahead and made a fruit salsa and chopped up some veggies and fruits for Dylan's lunch tomorrow and fruit for the kids to have smoothies for in the morning. I also made "Homemade Parmesan and Garlic Chips." Once dinner was done, we also had a few more leftovers, so I took the quinoa and brown rice mixture and mixed it with all the leftover veggies and made a delicious "Mediterranean Salad"for the kids LUNCH TOMORROW! I just added a splash of balsamic vinegar and some basil and olive oil and mixed it all up. We also had leftover chicken from tonight's dinner so I made my husband a "Buffalo Chicken Dip" for him to snack on tomorrow. We finished it off with some Greek Yogurt, honey, and blueberries for dessert! Oh and Dylan Grace LOVED the #blackbeans! It's not really hard to manage your household when you just PLAN AHEAD. Tomorrow'S BREAKFAST, LUNCH, AND DINNER are now covered and I can kick up my heels and enjoy my #Three3andunder and my handsome hubby!
