I also added fresh raspberries and a dollop of whipped cream to each slice.
I was surprised at how easy it was to make a successful bundt sponge as I was expecting this to be the hard bit. The most difficult thing was to get the icing looking good. You turn out a beautiful shaped cake, but it’s tricky not to ruin the look with crap icing! I iced this cake twice as the first time I followed the lines and it looked rubbish, so second time I found a recipe for a pourable icing and just literally drizzled in a circle, letting the icing find it’s way. Much better result. The difficulty is that you need the icing to be runny and warm enough to pour, but still thick and cool enough to hold its shape without going translucent. Anyone got a good chocolate glaze recipe?? Or tips on icing? X
