Litti, along with chokha, is a complete meal. It is a dough ball made up of whole wheat flour and stuffed with Sattu (roasted chickpea flour) mixed with herbs and spices and then roasted over coal or cow dung cakes or wood then it is tossed with lots of ghee. The litti are traditionally baked over a cow-dung fire, but in the modern day a new fried version has been developed.

Eggplant sprayed with mustard oil, roasted over the flame till the outer surface turns blackish and flaky. Once it's completely tender, peel, chop roughly and add fresh onions, coriander, chilies, garlic, and salt to taste. Top up with another teaspoon of mustard oil! Serve with plain or stuffed parathas. A variation of the Rajasthani baati, but its a local dish from Bihar..Litti Chokha. Here the Litti is similar to the baati, with a diference that its stuffed with sattu (roasted gram powder) and Chokha accompanies the littis to be one of the favourites in every household of the region.

Recipe :
For the Littis
1. In a bowl knead 2cups wheat flour with 2tsp carom seeds (ajwain) , 2tbsp ghee and salt to taste. Make a stiff dough and keep aside.
2. In a different bowl take 1 cup sattu , 2tsp paste of ginger and green chillies (can be finely chopped instead of paste), finely chopped green coriander , pinch of hing , 1tbsp lemin jyice and salt to taste. Add mustard oil to give a crumbly texture to this stuffing.
3. Make a medium sized ball oout of the dough and flaten it a bit . Put 1tbsp stuffing kr as requured and roll to make a round shaped litti.
4. In a tandoor or baati oven, roast till they turn golden brown from all sides. Remive and keep to cool.

For the Chokha
5. Wash and dry a big sized round brijal. Grease it with a little oil on the outside and roast it on direct flame till it turns soft and appears to be cooked. Remove from flame and let cool. Chop the brinjal, keeping aside the seeds.
6. In a bowl, mash 3 boiled potatoes. Add finely chopped onions and green chillies, chopped brijal as required , green coriander,lemon juice, red chilli powder, pinch of turmeric and salt to taste. Drizzle some mustard oil on top and mix.
7.
