Ever wondered is apple cider vinegar is worth all the hype? Well here is my opinion on the product
Besides it tasting terrible, it is quite good for your digestive system. If you are interested in incorporating ACV in your diet, I would recommend you mix it with approx 500ml of warm/hot water and a squeeze of fresh lemon juice first thing in the morning before breakfast. Not only are you hydrating your body after 9+ hours of no fluids or food, but it also helps to set your digestive system up for a good day (gets things moving if you know what I mean ). In conjunction with this, lemon is actually a highly alkaline food that will help to alkalise your body and remove toxins. Keep in mind that "detox" is a word that we typically think of when someone says toxins and is thrown around very loosely. This is not a "detox" drink but just something to support your digestive system.
ACV consumption controls sugar spikes and crashes which often occur between meals. When your sugar levels are under control, it is easy to stick to the diet or else it can lead to sugar craving and binge eating.
Our gut contains good and bad bacteria, when this balance is disturbed it can show a direct effect on our immune system. Improving gut health reduces inflammation and prevents obesity. ACV is one of the best probiotics which contains many good bacterial strains. When you buy ACV in the supermarket, look for one that has these words on the bottle: " organic" "raw" "unfiltered" and "with the mother". The mother is the probiotic part of the vinegar. The vinegar that has these words on the labels are usually cloudy and very dark yellow, which means that it has not been processed and diluted. You can find these ones in the health food section (not the regular vinegar/sauce isle). Not all of the claims about ACV have been backed up by science, but one of the most studied properties of the vinegar is its ability to increase insulin sensitivity and lower blood sugar levels, which I also agree with.

These enchiladas (I call them "Lava Wraps" with hopes my 4-year-old will eat them ) are hearty, gluten-free and go over well in my house!
Sweet potatoes, black beans, homemade enchilada sauce in gluten-free wraps! With an optional avocado-lime sauce! Yummmm!!
This is not a "quick" supper but also not difficult to make - just need some time. You can also assemble it a day ahead and cook the next day, which I might try next time
The recipe says 1 hour, 5 minutes total time...for me, from start to table, I had this ready in 1.5 hours (I'm a slow chopper, I like my fingers )
