This is the time and season for some gingerbread cookies! They are always a must! Here's a healthier version of them! They turned out chewy, moist and delicious! Everyone loved them!
10oz of almond flour or other healthy flour
1/2 cup xylitol
1/2 cup organic butter
3 tbsp organic molasses
1 full egg
2 tsp grated ginger 1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp pink salt
1/4 tsp ground nutmeg
Mix all the dry ingredients in a bowl and whisk together. In a separate bowl blend with a low speed blender the softened butter and the molasses, then add the egg and mix slightly. Proceed to add the dry ingredients to the mix and mix.
You'll end up with a very sticky dough. I had to finish mixing it with my hands because I thought the hand blender wasn't going to make it out alive♂️! Anyways. This should make you a 4inch ball. Let it sit for an hour and a half or so and then spread it (I used parchment paper under and over since it's so sticky). Once you have the dough rolled out you can use a cookie cutter or get creative! Bake at 350 degrees for 10-15 mins!
