Such an amazingly magical cake from the awesome and talented @luxeandthelady
Repost @luxeandthelady) So meowgical - I've been craving cake like crazy lately, so I decided to attempt the biggest raw cheesecake I've made yet . Inspired by the squishiest (like seriously they are so fun to squeeze ) , most delicious, handmade cotton candy marshmallows that @malvimallow was so kind to send me, I turned this cake into the caticorn version of my fav puffy animal of all @pusheen (if only I could give Pusheen a little squeeze )! If you haven't made a raw cake before I can't recommend it more- it's like a combination of ice cream cake and cheesecake all in one and it's SO GOOD . No baking necessary (that's the raw part), and the creaminess in the filling (very similar texture to cheesecake but dairy free) comes from soaked cashews. I wanted something a bit tart to offset the sweetness of the cotton candy, so the cake filling is fresh lemon -I just divided it among 5 bowls, added some natural coloring, and spread each into my springform pan. While it was setting in the freezer, I shaped the horn, ears, and tiny paws out of marzipan (using more natural coloring and a little pearl dust for ), and made the face out of dark . I had this weird idea to decorate it like a piece of toast, and that's how I came up w the mane - it's a combination of coconut yogurt and coconut cream that I colored just like the filling, and spread on using an angled knife for a bit of texture. Then I finished it with a sprinkle of gold stars, frosted blueberries, organic sprinkles, and those incredible marshmallows . 339 dishes later and it was ready to eat ! *if you'd like to see the inside and sides of the cake I posted a few different angles of it in my stories . This is also my second submission to the awesome #unicornfoodparty hosted by @just_blends & @featherandcrumb
