Typical Chinese dinner Organic basmati rice with spicy stir fried wood ear mushroom, with celery, sprouted tofu and carrots. Growing up, I was told that wood ear mushroom helps to detox the body and get rid of toxins because of their smooth, soft and jelly texture. They sure look strange, and I remember when kids at school would ask "what is that?!" when mom would prepare it for my lunch.

Did some meal prep for the week today and that included roasting some of my favorite veggies! I cut up Brussels sprouts and broccoli and threw them on a tray with chickpeas and some tumeric, garlic powder and onion powder. I baked them at 375 for about 30 minutes and they're sooo yummy I had some with my dinner tonight. This is such a quick and easy way to meal prep, because now I have all of this already cooked and ready to eat for everyday this week
