I was going to roast some organic veggies for lunch but I was a bit time deprived, so I lazily threw them in the blender with an apple and some water and WAHLAH!! It's definitely got texture, and it's safe to say it's nothing like the Cabala juices I'm used to having, but at least it's got those magical fibres, and surely my gut will thank me because my palate is somewhat disappointed that it missed out on roast veggies
Fuss free #salmon, bell #peppers, spring #onions and cannellini #bean stew served with curried couscous. #Recipe:
Place the salmon in a deep pan
Chop and add the bell peppers and spring onions #Roast on medium to high heat until the #vegetables soften and the salmon separates
Add salt to taste, herbs (I went for sage and ground cumin)
Add precooked cannellini beans and cook for a few more minutes
For the #couscous, boil one cup of water with curry, herbs (I chose oregano) and salt to taste
Once boiling, turn off the heat, pour in one cup of couscous and extravirgin olive oil and stir with a fork until all the liquid is absorbed
salmon is an excellent source of the #omega3 oil #DHA, which is essential for brain function, as well as high quality #protein and B vitamins;
peppers are packed with vitamin c and #fibre;
spring onions provide #vitamins A and C and fibre;
beans are rich in fibre, protein, #iron, magnesium and calcium.
