We had grandparents visiting today and they kindly brought us a bag full of homegrown fruit and veg so I spent an hour this afternoon making a couple of things for next week. I stewed cooking apples with blackberries, raspberries, lemon juice, cinnamon and vanilla and this cooked down into a compote type consistency which we can eat with yoghurt or add to smoothies. I also made a quick tomato soup by sautéing red onion, carrot, garlic and celery for a couple of mins before adding loads of cherry tomatoes, fresh basil and stock and then simmering for 30min before blitzing. Ingredients: shredded cabbage, shredded spinach, shredded green apple, shredded tuna, brown rice and a homemade tahini dressing ... I'd say it's a good lunch for a Monday!
