Some things you should know about my meals: 🍴They are EASY to make. Like SUPER easy. 🍴I usually eat out of the same bowl - it’s a pasta bowl (thanks mama in law 😉) 🍴 Yes everything you see here is approved for my meal plan 🍴 Yes you can lose weight on this plan - {unless you’re pregnant and eating my meal plan two times a day 🤣} 🍴 I only eat food I like and food that tastes good to me. I do NOT ignore my palate just to be ‘healthy’ 🍴I practice mindful eating - I try to engage the senses. Make sure my food is pleasing to the eye. Brownie Crust
1 cup Medjool dates (soaked if not soft)
1 1/2 cups raw almonds & pecans
1/4 cup shredded coconut
1 TBSP almond butter
1/2 tsp sea salt
1/2 tsp ground cinnamon
4-6 TBSP cocoa powder
Vegan Salted Caramel
1 cup pitted Medjool dates (soaked if not soft)
1/2 cup coconut nectar
1/3 cup canned full-fat coconut milk
1/4 cup almond butter
1 tsp vanilla extract
Large pinch of sea salt
Chocolate Ganache
7 ounces dairy-free dark chocolate (70% or higher), chopped
1 1/4 cups canned coconut cream
Pinch of sea salt
For brownie crust, add all ingredients to a food processor and blend until you have a slightly sticky dough that comes together when you press it with your fingers.
Press the crust onto the bottom and up the sides of of a 9-inch tart pan with removable bottom. Freeze for 20 minutes to firm up.
For salted caramel, add dates to food processor until it starts to come together into a paste. Add remaining ingredients and blend until creamy and thick. Pour caramel into the chilled tart crust. Put in the fridge while you make the ganache.
For chocolate ganache, add coconut cream to a saucepan over medium-high heat until steaming but not boiling. Pour over the dark chocolate and let it sit for 1-2 minutes. Then, carefully stir until chocolate is melted and smooth. Cool to room temperature.
Pour cooled chocolate ganache over chilled tart and smooth evenly with a spatula.
Refrigerate the tart until set, 2-4 hours. Before serving, let tart come to room temperature. Enjoy!

If you are not a fan of cauliflower, try it roasted or in this case, air-fried. It takes on a sweeter flavor and it's bursting with flavor, especially when sprinkled with curry powder, and individual spices like coriander, cumin, turmeric, black pepper with garlic salt and onion powder.

Cauliflower is low calorie, high in antioxidants and fiber. Just 100 g provides you 73% of the recommended daily amount of vitamin C.

Simply spray the florets with cooking spray, toss and mix the seasonings, and pop it into the air-fryer for 15 minutes, making sure to stir midway.
Yum! Serve with a protein and starchy carb like rice, and you are set! .
