It's hard for me to believe that Chicago was only a week ago. But, hey, it is what it is. It is also Sunday again and that means time for a kick ass brunch and @publicanchicago certainly has got that covered. I went straight up comfort with this corn beef hash with leeks, cheddar, dill & a poached egg. Hearty, creamy and with some sharpness, it was the right start to a whirlwind trip or even a whirlwind week. I got a few more hours in NYC so gonna make those count in a culinary sense then I'm never eating again. Get some. P.S. nice to meet up with @luciecamp in her town of Chicago. Mel’s MAC n Cheez
1 clove garlic
1 tsp. turmeric
1/2 tsp. salt
1/4 cup nutritional yeast or vegan cheese of choice
1 cup cashews, soaked for 2 hours and drained
1/4 cup water
1 8-oz. pkg. pasta, cooked and drained (gluten free if desired)
Place the garlic, turmeric, salt, nutritional yeast, cashews, and water in a blender. Process until completely smooth.
Pour over the pasta and stir. Heat before serving.
Makes 6 servings
