Tray bakes are always a go-to family meal! 1 tray & you have dinner? What could be any easy? Every family has different schedules and most of the time, time is never on their sides! So this is a sure winner for times like that! Organic sausage & potato bake! Recipe below! serves 4.
8 organic sausages
500g baby red royal potatoes
1/2 small butternut pumpkin, peeled, chopped into even 1cm pieces
1 red onion, peeled, cut into quaters leaving the core in
2 tbsp olive oil
1 tsp paprika
1 tsp fresh thyme leaves, stems removed, chopped
1 tsp fresh garlic, finely grated
250g truss cherry tomatoes
Preheat oven to 200° (180 fan forced)
Place potatoes into a steamer or covered in large bowl in the microwave, steam for 8-10 minutes or until soft but still just holding it shape.
In the meantime to make paprika thyme oil combine the olive oil, paprika, garlic and thyme leaves into a small bowl. Set aside
Once potatoes are steamed place onto a lined tray. With a potato masher gently press the potatoes down. Creating a smashed consistency though not breaking them up to much, then add the pumpkin and red onion also to the tray, drizzle over paprika and thyme oil and coat veggies. Then arrange sausages evenly around making sure everything is in one single flat layer.
