I love making something healthy on Sunday I can grab during the week when I get hungry between meals. This week I tried these "mancakes" and they will definitely do the trick as a filling snack for the week!

Ingredients:
•2 cups whole wheat flour
•2 tbsp. light brown sugar
•1 tbsp. pumpkin seeds, chopped
•1 tbsp. flax seeds
•1 tbsp. chia seeds
•1 tbsp. walnuts, chopped •3 tsp. baking powder
•½ tsp. fine sea salt
•¼ cup coconut oil, melted
•¼ cup almond milk
•2 large eggs, beaten

Preparation:
1.Whisk together flour, brown sugar, pumpkin seeds, fax seeds, chia seeds, walnuts, baking powder and salt until well blended. Add coconut oil, water and eggs, and stir until well blended.
2.Heat a nonstick griddle to 350 degrees. Spoon batter by ¼ cupfuls onto hot griddle. Cook until tops of “mancakes” bubble; turn and cook until golden brown. Serve with maple syrup or honey.
