Sometimes Mondays call for a big plate of #pasta . See below for #recipe! We added meatballs from NuNus in Youngsville and instead of spaghetti noodles we used fettuccini #thevintagefork
Spaghetti Red Sauce (not meat sauce)
1 yellow onion
2 cloves garlic
1 Small can petite dice tomatoes
1 large can crushed tomatoes
1 large can tomatoe sauce
1 cup wine
Half a container of portobello mushrooms
20-25 halved grape tomatoes
Good bit of Italian seasoning
Few pinches of red pepper flakes
Few pinches of sugar
4-5 pinches of dried basil
Brown meatballs with a little olive oil in a sauce pan.
Once brown place meatballs on a cookie sheet and throw in the oven at 350F
In the Sauce pain with meatball drippings put in chopped yellow onion and chopped garlic to brown. Once translucent add in small can of diced tomatoes, cherry tomatoes, and mushrooms. Once boiling add in the red wine and let the alcohol cook out and thicken with the tomatoes.
When the sauce is thickened add in the crushed tomatoes and tomato sauce and season with the crushed red pepper, sugar, dried basil, and Italian seasoning.
Bring to a boil and let simmer with finished meatballs in the sauce. #enjoy

It's leftover pizza from dinner, raw vegies and fruit, a cut of a paleo bar (not made by me!), some guacamole and some grain free crackers.
