One of my avocados was on the verge of going bad so I mashed it up and mixed it with some slightly mashed chickpeas. Just another variation of a chickpea salad sandwich without having to use hummus, but equally satisfying in my opinion. The perfect non-cook recipe, and just one bowl and a cutting board were dirtied in the process of making this.
Chickpea Salad Sandwich
1 15 oz can chickpeas, rinsed and drained
1 avocado, ripe
1 tsp garlic powder
1 tsp smoked paprika
1/2 lemon, juiced
2 celery ribs, diced
1/4 red onion, diced
2 sprigs dill, minced
Salt and pepper to taste
4 slices of whole grain bread
Greens of your choice
4 leaves of basil, cut into strips
1/2 cucumber, sliced or turned to ribbons
Sandwich spread of choosing (mustard or hummus works)
In a small bowl, add drained chickpeas and lightly mash with a fork. Open avocado, remove seed (carefully) and scrap inside of avocado into same bowl. Add celery, red onion, dill and lemon juice. With fork, mash and fold in ingredients until well combined. Add in salt and pepper to taste and fold into mixture. Assemble sandwiches (makes 2) by starting with sandwich spread on your bread (I used some @cava roasted red pepper hummus on @daveskillerbread) then adding greens, chickpea mix, basil and cucumber in order of your choosing. Feel free to swap out with your preferred veggies, this was just what I had on hand in my fridge.

Back to work tomorrow so I am finishing my "weekend" off by cleaning the house, doing lots of laundry and eating this yummy plate of veggies! Dietrich is starting to eat and explore foods now so after I finish he's getting some mashed avocado mixed with a little breast milk. So far he loves bananas and sweet potato but is not a fan of carrots. So here is my dinner! I felt like I needed to eat something really green tonight since I have already ate two of the 6 doughnuts I bought yesterday ... balance! I used @frommybowl rice and bean recipe and chucked it all in my rice cooker. I cooked up some fajita veggies to go on the side and put on top of a bed of romaine. Guac on the side with cilantro and drizzled with lemon and sriacha!
