Nor’easter was a bust. The predicted snowfall was around a foot and we only received 1 inch ♀️ I’ll take it if it means we’re closer to Spring! Yesterday my throat started hurting me so I went to bed early and I’m sticking to softer foods today. I tried this Mac & “Cheese” recipe (with a few modifications - jalapeño ) from @sara.haven and it did not disappoint! Not sure why I haven’t tried this sooner since I always have the ingredients on hand ♀️
__________________________________________ #whatsonmyplate - @eatbanza chickpea pasta with 1/4 cup @kitehillfoods jalapeño almond cream cheese + 1/4 cup @califiafarms almond milk mixed together and heated for about 45 seconds in a hot pan. Added some broccoli florets, grape tomatoes, red chili flakes, basil, garlic powder and of course the @organicvalley feta cheese (can you tell I really LOVE feta??)
Did an experiment with some spaghetti squash I'm growing for the family...The plant on the top has been growing in soil...the plant on the bottom has been growing in the growbed of my auquaponics set up, on top of my fish tank. It's been getting nothing but fish water...same lighting, same temp, same air! The root system of the bottom plant is about 3 times larger than the soil plant!
It's March, and still cold outside! These guys are thriving indoors, with minimal electricity, and only the water thats already in the tank. You place a set up like this next to a window, and you won't even need the light (As long as you shield the fish tank from sunlight, so algae doesn't grow)! ANYONE can do this! You can eat vegetables regularly, without being at the mercy of growing seasons, or high market prices! In the past year, about 27 EPA regulations have been reversed, in pursuit of the almighty dollar. A year ago today signifies more than a step in the right direction, but it signifies the day Diane Davidson Apolinar decided she was fed up and it was time to take back control of her life, her health, and her fitness.
In just a year, we’ve lost over 70lbs! We’ve gone From not being able to walk a 100 feet without being out of breath to leading a group of individuals on a 1/4 mile jog, or as she like to call it trot lol. From having trouble going from a seated to standing position, to being able to lay all the way down on the floor and standing all the way up without having to hold on to anything.
We’ve gone from not being able to go upstairs, to holding her hand while going up stairs, to now having her going up and down multiple flights of stairs multiple times as a warm up for her workout and me just standing at top of the staircase making sure she’s not taking a break to chat up the other gym goers. Mom loves talking that’s for sure lol.
Thank you for your continued 100% effort. You don’t know how much this means to not only yourself, but to all your friends and family.
