Morning cup of chai in Old Delhi. There is no shortage of chai wallas along the streets of Old Delhi. Half the fun is picking one, and developing a bond by the time the tea is brewed. There were two tea flavours on offer here: fresh ginger root, and my all-time favourite, sweet masala, which is packed with spices, milk, hot water and endless spoonfuls of sugar. All cooked in a saucepan on a gas top and then poured into small glass cups. Perfection.
