Dinner tonight was Mexican with flatbread, salsa avocado salad, cheese and yoghurt mixed with paprika and chilli sauce.....
Sauté onion, garlic, carrot celery then add mince and brown, add a jar of tomatoes some tomato paste, salt+pepper tsp sugar and Mexican spices, cumin. Cook through.
Salsa was tomato, cucumber, red onion, capsicum, coriander olive oil and salt.
Flatbread is 500g or (300g) of self raising flour 500g or (300g) of Greek yoghurt 1 Tbs of baking powder 1 Tbs salt, mix together gently in bowl then turn out on bench, flour bench ( you may need more flour, you don’t want it sticky) bring together and form into round ball. Tear bits off roll out and fry in pan. You can add garlic and melted butter on top if want. #mexicanfood#flatbread#itsnearlyfriday
