Our minds were pretty blown when we saw @keto4karboholics' Valentine's Day bouquet for her husband! She used our dipping cups to dip strawberries and bacon into an amazing sugar free, low carb arrangement.
I mentioned in a previous post about the spinach and butternut squash au gratin that I purchased at Trader Joe's. Well seeing how it only had about 8 slices in the container I decided to make it myself. Not disappointed at all!!! This will definitely be a new and frequent dish for me! The squash was thinly sliced with the skin on and then tossed in olive oil, salt, and pepper. I baked it at 400 degrees for 45 minutes until it was golden and soft. The spinach au gratin was made using butter, spinach, almond milk, parmesan, and cheddar cheese with chopped garlic.
I transferred the cooked squash to my copper chef and spread the cheese mixture on top and then added more parmesan. It was put back into the oven and baked for about another 40 minutes. I thought it would be a mistake to leave the skin on but it was surprisingly pleasant and added a nice texture to the dish. I also made baked chicken breast and now the squash and chicken are having a party in my belly! Food you feel good about eating and it tastes amazing! And why am I so late on almond milk lol?
Looks like Halotop is now available at @colessupermarkets - I wathere’snted to pick myself up a bit of a treat to have tonight so just grabbed this as soon as I saw it. ♀️ Kinda regretting it now though.. it’s totally my own fault as this idiot, in the excitement of the moment, didn’t flip the bloody container around to look at the back. I just thought - it’s halotop! It’s totally fine. Unfortunately not ideal for me. 14g of carbs per serve ( 4 serves in this mini tub) I didn’t realise! I’m a dope!! ♀️ But it was $10, it’s shark week and I deserve a bloody treat - so I’m gonna eat it (will share with Dan cos he’s an angel and I’m not a monster) and I’ll just have to do as low carb as I can manage for the rest of the week.

My fiancé and I went out to dinner to celebrate Valentine’s Day and I had spinach dip with bread and fries and half a chicken Caesar wrap. And I’m not going to beat myself up, if anything I’ve learned from past times of trying to get healthy and lose weight, is that if I completely cut myself off from everything I will have a harder time sticking to my new lifestyle.
