I know it might not look the greatest but, after the morning that I had, it was pure heaven to eat.
Full disclosure, I left my lunch bag on the train. Not only did it have my breakfast, but it also had my lunch AND my snack in it. It wasn’t the best way to kick off my Monday.
There’s a new-ish poke place that opened near our office that has vegan and options, so after fruit for breakfast, I loaded up on protein.
Here’s how I counted the bowl:
Miso marinated tofu (counting it, generously, as 3 sp)
Marinated shiitake mushrooms (counting generously as 3 sp)
Carrot ginger marinade (counting as 1 sp)
I’d eat here again! I’d make my own bowl, though, next time. But considering I had pre-tracked my own lunch at 5 sp, spending only a couple points more is fine with me!
I’m also counting this as an NSV—I typically don’t do well with losing things (who does!) but today I didn’t let myself panic, and I took the time to figure out what I needed to make the rest of my day successful.
As I passed by the River Shannon today my thoughts were with the families and friends of the young Irish kayakers missing in Ecuador, in a flash flood of the beautiful river they were paddling. They were following their passion, living life to the fullest. I wish that the search parties remain safe too.

Something to think about on this Monday morning. Even when times are difficult and you feel that you're in the darkest night of your soul, don't give up because love, courage, and hope still exist inside you.
