• 1 tbsp. vegetable oil • 1 onion, finely chopped
• 6 cloves garlic, minced
• 1 whole chicken, cut into 8 pieces
• 1/4 cup tomato paste
• 2 cups chopped tomatoes
• 2 carrots, peeled and grated
• 3 1/4 cups hot water
• 1 Maggi Kabsa Mix
• 2 1/4 basmati rice, soaked and rinced
• 1/4 cup raisins
• 1/4 cup silvered pistachios
• ¼ cup pine nuts
1. In a rice pot sauté onions vegetable oil until golden brown. Add the chicken pieces and brown them over medium-high heat until lightly browned, about 10 minutes. Add in the tomato puree, chopped tomatoes, garlic, grated carrots, Maggi Kabsa Mix and water, bring to a boil.
2. Stir in rice and boil on high heat for 5 minutes. Cover and cook over medium-low heat for 20 minutes until rice is fork tender.
3. Gently transfer to a serving dish and garnish with toasted pine seeds, raisons and almonds.
