I'm winning the day. I just created this lovely dish and the toddler loved it too. It is heart healthy my friends. I made it all with leftovers. I took veggie noodles, added about a cup of chicken broth, chopped leftover chicken, fresh spinach, ghee or real butter, and garlic cooked in a pot. Adding fresh basil and a tiny bit of parmesan would have taken it to the next level!
