Roasted squash & crispy kale pizza made with quinoa crust. While I love my veggie bowls, I wanted to make something a little different tonight. I felt like non traditional pizza so decided on this combo of squash, sweet potato, kale, shallots, sage and goat cheese. It was so good and hit the spot on the taste, savory with a bit of sweetness. #yum ••Recipe••
•Quinoa pizza crust (cooked)- I used the recipe from @deliciouslyella cookbook called "Deliciously Ella" (Which I love ) it was really easy using only a few ingredients but any healthier crust will be great. @simplemills makes an almond flour one for grain free.
• About 2 cups of chopped squash and 1/2 chopped sweet potato roasted at 425 for about 30 minutes. Transfer into food processor or blender and add about a tablespoon of good quality butter or ghee, s&p •in a sauté pan w/ oil of choice cook 2 shallots, and 2-3 tbs of fresh sage until soft and little crispy. Add about 2 cups of chopped kale until cooked and its starts to crisp just a bit (it will get cooked a little more in oven).
• spread butternut squash mixture on cooked pizza crust, add the kale mixture and top with goat cheese. Cook on 425 for about 7-10 minutes.
