Don’t planners make you feel like you have your life together? When I first started trying to be healthy I meal prepped. EVERY. SINGLE. WEEK. It took a good chunk of my day but it kept me on track. Now that I’ve gotten better at my perfect balance, I try to see what sounds good for the week and buy ingredients that I can use for multiple meals. Planning is essential. Book those time slots for your workouts. With BBG, I would wake up 45 min before work to get it in. I would MAKE time because it was a priority to me. Same with today. Make your body one of your biggest priorities because it’s the only one you have. Because you don’t want to wake up one day years later saying “I wish I did” when it may be too late. ~Dairy Free Chocolate Coconut Cream Pie~

I actually had zero idea that today was National Pie Day when I volunteered to make this. Really, I wasn’t even planning to make this at all! However, the only thing left unclaimed for my church group community meal was “dessert.” So a healthy, dairy free dessert is what they will get! :) Avocados are a main ingredient! - ⅔ Cup Rolled Oats
- ⅔ Cup Almonds
- 1 Cup Unsweetened Shredded Coconut
- ¼ Tsp Salt
- 2 Tbsps Maple Syrup
- ¼ Cup Coconut Oil, Melted
~ Chocolate Mousse~
- 2 Avocados, Ripe
- 14 oz Coconut Cream, or 1 Can
-¾ Cup Cocoa Powder
-¾ Cup Coconut Milk
- ⅓ Cup Maple Syrup
- 1 Pinch Of Salt
~Coconut Whipped Cream~
- 14 oz Coconut Milk, Full-fat, Chilled and Divided
- 2 Tbsps Maple Syrup
- 1/2 Tsp Vanilla Extract
- Toasted Coconut, for serving
Preheat oven to 350°F (180°C). In a food processor, pulse rolled oats until finely ground. Add almonds and blend until finely chopped. Add unsweetened coconut flakes and salt. Pulse a few times. Add melted coconut oil and maple syrup until combined. Pour pie mixture into a greased 9x9-inch pie dish, spreading it evenly on the bottom and sides. Poke the crust with a fork several times. Bake for 20 minutes. For the filling, add the avocados, coconut cream, cocoa powder,coconut milk, maple syrup, and salt to a blender and blend until smooth. Pour mixture into the cooled crust and spread an even layer. Place in the refrigerator for 4 hours or overnight. For the coconut whipped cream, add the thick part of the coconut milk to a bowl. Using an electric mixer, beat the coconut milk until fluffy. Add vanilla extract and maple syrup and beat until well combined. Chill until ready to serve. Top with toasted coconut flakes.

Finished my latest personal development book! Yes, I was procrastinating reading a book about procrastination One of my goals for this year is to read personal development 5 times a week. I failed the first 3 weeks of the year. So I should give up right? Change my goal?? Heck no!! I decided to track it on a calendar. Which coincidentally is the way I became consistent working out (and still do it to this day). The visual reminder works like magic for me! I can see when I’m doing my best and when I’m at my worst and need a kick in the ass!
Am I the only one who questions the quote “best year ever”? I feel like…. There can be a lot of great, amazing years. And there will be some bad years. Plus, how can every year be the best year ever? I’m TOTALLY behind the mentality of “best year ever” because I’m a pretty positive person and I think we should expect wonderful things. That we should expect God to work mightly in our lives.
But the truth is, we don’t know what this year holds! We can just do our best day by day by day. We should try to do better and be better than we have in the past. It’s called sanctification! It’s God working in us throughout our whole lives.
Expect God to work in your life and set goals and look forward to this year (can you believe January is almost gone?! ) but MOST of all…. Trust God and know that no matter what happens… He is still good.
