Another #babyledweaning shot. We’re having so much fun experimenting with foods, my little pickle is pretty much eating everything and anything which is so lovely to see. The downside is the mess but that’s a small price to pay. This evenings dinner was a simple mushroom risotto made with 5 ingredients- 1 tbsp rapeseed oil, half an onion, 2 portobello mushrooms, 100g brown basmati rice, roughly 450ml water & a few sprigs of flat leaf parsley. Heat the oil and soften the onions for 4/5 mins, add the water and rice, simmer for 15-20mins, when the water is almost all absorbed add the mushrooms (you can add some black pepper here if you’d like to), cook through until the water is absorbed and the rice is cooked. If you need to add more water then do so. Or you can try adding some almond / coconut milk instead of some of the water. Serve with some chopped parsley and voila dinner is served :) ready in about 30minutes.
