I'm enjoying a cozy night in with a hot bowl of brown rice with sauteed swiss chard, onions, mushrooms and kale in a Marsala cream sauce with a touch of thyme. Sounds good, tastes great!! The roads are icy out there, please be safe.
Oatmeal is my go to for breakfast. Quick & easy, not so messy (can’t do cleaning in the morning) keeps me full long and with blueberries on top it’s really good too. I tried overnight oats a couple of times, oh no, that just wasn’t my thing.. So, what side are you on, the hot (and yummy) oatmeal or the cold?
A little history for ya: The first is picture is from 1960 of the Pendleton bridge being constructed that crosses from Texas to Louisiana. The body of water known as the Sabine River Basin shown in the first picture is now a part of Lake Toledo Bend Reservoir, 2nd & 3rd picture, which was formed in 1966 from the construction of the Toledo Bend Dam. Rumor has it back in the day the river was very deep and treacherous to cross and people would swim across and never make it to the other side. Before hurricane Rita hit here in 2005, the lake hit a record low level and a peninsula of land unearthed from the water near the Texas side and all you could see where large holes in the ground shaped like graves. People would bury their loved ones there from drowning in the Sabine River. Nowadays we drive across that bridge not thinking about the people that died crossing it but thinking about the good fishing and the beautiful view. If you come visit us make sure you take a drive over to the LA side across the bridge and see it for your own eyes.
