Here’s a to 2018! We don’t drink much grog at Chez Wild and this could be mistaken for some insane Sauternes experiment but it’s actually #raw and #unfiltered Miso Damari — the liquid that accumulates in Miso during fermentation. With the warmer summer months our Roasted Pumpkin and Cannelini Miso has become more bioactive. It’s generously giving off about 1/4 cup per week at the moment. The flavour profile of this golden juice is phenomenal. It’s sweet, salty and has some surprisingly floral notes alongside caramel and apricot. We’re stashing it away for now and will try to find a good use for it later his year.
