Chocolate Orange Mousse: 🍫🍊

These chocolate orange mousse cups are guaranteed to impress both your vegan and non-vegan friends.
Filled with rich, chocolatey goodness, the orange skins are a fun serving option if you want to try something a bit different! These will last in the fridge for a few days.
We recommend serving with whipped coconut cream and chocolate trimmings, but feel free to experiment with fruits, seeds and any of your favourite toppings.
Makes 4 cups.
——Ingredients——
75g dark chocolate (plus a little extra for decoration)
1 avocado peeled and stone removed
2 tbsp maple syrup
Can of coconut milk
1/4 cup orange juice
1 tsp orange zest
1 tsp vanilla extract
2 large oranges
———Method———
1. Place can of coconut milk in the fridge to set the cream.
2. Slice the two large oranges in half and, then remove the segments and skin from the insides using a spoon. I use a bowl underneath the oranges to catch all the yummy juice to drink later!
3. Then, place a heatproof bowl in the mouth of a pan containing roughly an inch of hot water. Melt the chocolate in the bowl, stirring occasionally. Once the chocolate is melted, remove the bowl from the pan and leave the chocolate to cool slightly while you carry out the next steps.
4. Remove can of coconut milk from the fridge and remove the solid cream that has set at the top of the can.
5. Place 1/2 cup of the coconut cream in a food processor. Then add the avocado, maple syrup, orange juice, orange zest and vanilla extract, and pulse until smooth.
6. Add in the melted chocolate and pulse for a further 15-20 seconds.
7. Transfer the mousse mixture to the orange halves and place in the fridge to set for at least 30 minutes.
8. When you are ready to serve, remove the mousses from the fridge and top with the remaining coconut cream and grated dark chocolate.

The old adage of an apple a day keeps the doctor away still has some validity. And new research has discovered apple juice three times a week helps prevent Alzheimer’s and heart disease.

Dr. Thomas Shea, a neurobiologist, and his research team at the University of Massachusetts topped off 10 years of studying apples’ effects on brain health.
Twenty-one AD patients from ages 72 to 93 were fed four ounces of apple juice twice daily for thirty days. There were improvements with memory as well as the negative emotional moods normally associated with AD victims.

Dr. Shea concluded that by drinking apple juice only three times per week, you would reduce your chances of #Alzheimers by 75%. And there are other benefits. Other animal studies have demonstrated that apples protect the heart, increase lipid metabolism, and reduce inflammation.

Don’t bother with store bought pasteurized apple juice. Organic raw and unfiltered apple juice is better. But the best way to go is juicing just enough apples to drink at one sitting each time. Since Big Ag apples top the list of the “dirty dozen” (the 12 most sprayed foods), you should invest in organic apples.

A slow speed masticating juicer is recommended. It can be single auger (masticating screw) or double auger. You can Google slow speed masticating juicers and shop for what works for you. This is a worthwhile investment if you intend to do any juicing. I’ve been very pleased with my Omega single auger juicer with its 15 year parts guarantee.

This type of juicer eliminates the extra fiber that inhibits rapid absorption while concentrating the juice of several items in one drink and preserving the enzymes that a high speed juicer may destroy. And it’s easy to clean.

Do not peel the apples. Cut them into pieces small enough for the juicer and include the core, seeds and all. Adding a small piece of peeled ginger root into the juicer adds more inflammatory protection. A freshly squeezed lemon can be added also. This should be done at least three times a week.

The last decade or so has brought ample evidence that Americans are gradually changing their diets, driven by health concerns and other factors.

But a new study points to one change that is starker than many have thought: Americans cut their beef consumption by 19 percent — nearly one-fifth — in the years from 2005 to 2014, according to research released on Wednesday by the Natural Resources Defense Council.

The environmental group found that consumption of chicken and pork fell as well.

The council is hailing the plummeting popularity of beef as a victory in the fight against climate change, because greenhouse gases are produced when cattle are raised. The group estimates that the resulting reduction in pollution would equal the emissions of 39 million cars, or about one-sixth of the number of cars registered in the United States in 2015. “Whether we realize it or not, Americans have been fighting greenhouse gas emissions with their forks,” said Sujatha Bergen, a policy specialist in the Natural Resources Defense Council’s food and agriculture program.

The council did not ask Americans why they were eating differently. But Ms. Bergen said that greater attention to how food affected health and well-being — rather than awareness of the environmental impact — was probably driving the decline in beef consumption.

Asked what prompted them to eat less beef, 37 percent of consumers surveyed cited its price as the No. 1 reason in research published in January by Mintel, a consumer research firm. Thirty-five percent of the respondents said they were eating more protein from other sources, like chicken or tofu. But more than a quarter ascribed the change to their concern about cholesterol and saturated fats.

The beef association said it was “fallacious” to draw a link between beef consumption and automobile emissions. Sara Place, the group’s senior director of sustainable beef production research, said consumers could do more to reduce carbon emissions by throwing away less food, particularly fruits and vegetables, than by eating less beef.

In addition to delivering a great natural scent free of synthetic chemicals, this spray helps eliminate bad odors—as opposed to masking them—thanks to vodka’s natural antimicrobial properties. Here’s how to make it.

What You'll Need

Spray bottle (choose a size that suits your needs)
Citrus essential oil (good options include sweet orange, mandarin, lemon, and grapefruit)
Water
Vodka

1. Add the water and vodka to the spray bottle in a one-to-one ratio—I used 1 cup of vodka and 1 cup of water because my bottle was fairly large.

2. Give the mixture a good swirl, then add several drops of your essential oil—10 drops seemed to do the trick for my spray, but use more or less depending on your preferences.

Golden paste is a turmeric-based paste that taken orally provides health benefits to humans as well as animals (dogs and horses). Turmeric, known for is anti-inflammatory properties and used medicinally for over 4,000 years, is great for arthritis, skin health, immune system, and even cancer.
This recipe for golden paste requires the following ingredients:

½ cup turmeric powder
1 cup water (+ ½ extra if necessary)
1.5 tsp ground black pepper
70 ml olive oil or coconut oil

Directions: •Mix water (1 cup) with turmeric powder in a pan and slowly heat it up and stir for 6-10 minutes until you get a thick paste (add the additional ½ cup water if it is too thick). •Add black pepper and oil and continue stirring until all the ingredients are fully mixed in together. •Allow the paste to cool. Store in the refrigerator in a jar for up to 1 week (some people successfully stored it for 2 weeks). The human body has a tough time utilizing curcumin effectively. However a small amount of black pepper boosted bioavailability of curcumin by up to 2000%, the study shows.

A 2010 peer-reviewed research article published in The International Journal of Biochemistry & Cell Biology concluded that “the various effects of curcumin has been widely studied in Western systems of medicine for decades, and has been found to possess antioxidant and anti-inflammatory activities.
A 2006 study found the turmeric helps reduce join inflammation. A different study found turmeric to have anti-arthritic effect. A 2012 study provided evidence that curcumin might even be more effective for rheumatoid arthritis than anti-inflammatory drugs.

A 2006 double-blind, placebo-controlled trial found curcumin helpful for keeping ulcerative colitis in remission. And a 2013 paper concluded that curcumin is “a very promising new therapeutic option for the treatment of gastrointestinal and hepatic diseases"

Turmeric can be used to treat wounds, cuts, rashes, bruises, insect bites, and swelling. A 2014 article from Life Sciences concluded that topical application of curcumin has a great therapeutic effect on skin wounds.

You'll need:
• 1/2 cup cashew nuts, soaked until softened • 1 cup unsweetened soy milk
• 2 tbs tapioca starch
• 1 tsp Himalayan salt
• 1/8 tsp garlic powder • 2 tbs tahini
• 3 tbs nutritional yeast
For coating:
• plain flour • soy milk • breadcrumbs
And
• coconut oil for frying

Instructions:
1. Blend all the ingredients, apart from the coating and coconut oil, together for at least a minute or two- on full speed. The mixture should come out looking almost like pancake batter, just a tad thinner. That's when you know it's ready.
2. Put a nonstick pan on medium low heat, pour in the mixture. Stir vigorously.
3. Make sure the mixture is viscous and not lumpy by continuing to stir until the mixture begins to pulls from the side of the pan (as shown in the video) and forms a ball.
2. Transfer your "cheese" to a container, preferably shaped like the ones in the video. Leave to cool before popping in the fridge or a freezer for an hour- or less. Just until holds shape. Be careful not to leave it too long. The cheese should come out still soft but solid. *Notice how it still jiggles a bit during the breading process- that's what you aim for*

3. Cut into strips before dunking them in plain flour- soy milk- plain flour- soy milk- and breadcrumbs.
4. Deep fry in coconut oil until golden brown. 🧀🌱
