In the study, Hong Kong researchers looked at data from 17,700 older adults in China. They followed participants for an average of six years to see if those eating five servings of fruits and vegetables a day—the World Health Organization's current recommended amount—developed dementia.

Compared to those who ate less than five a day (three daily servings of vegetables and two of fruit), the five-serving eaters had a lower risk of dementia. Eating three additional servings of vegetables a day lowered the risk even more. And the results remained consistent, even after accounting for other factors like smoking and existing chronic conditions.

Just exactly what's behind the diet-dementia connection, researchers can't say for sure. But the study authors guess it may have to do with the role #fruits and vegetables play in reducing inflammation. That makes sense, says Jen Bruning, M.S., R.D.N., a spokesperson for the Academy of Nutrition and Dietetics. "There's a decent amount of research on how fruits and veggies help with anti-inflammation and heart health," she says. "What's good for the heart's blood vessels may be good for brain vessels, too." One piece of advice that you've heard since you were little rings true: "Eat your #vegetables." There's good reason for that advice: eating plenty of fruits and veggies each day has been shown to help prevent heart disease and stroke, aid weight loss, fight some cancers, and much more. Vitamin D plays a critical role in maintaining bone health. When blood levels of calcium begin to drop, the body responds in several ways. It promotes the conversion of vitamin D into its active form, which then travels to the intestines (to encourage greater calcium absorption into the blood) and to the kidneys (to minimize calcium loss in the urine). For bone health, an adequate intake of vitamin D is no less important than calcium.
Vitamin K, which is found mainly in green, leafy vegetables, likely plays one or more important roles in #calcium regulation and bone formation. Low levels of circulating vitamin K have been linked with low bone density, and supplementation with vitamin K shows improvements in biochemical measures of bone health. A report from the Nurses’ Health Study suggests that women who get at least 110 micrograms of vitamin K a day are 30 percent less likely to break a hip than women who get less than that. Among the nurses, eating a serving of lettuce or other green, leafy vegetable a day cut the risk of hip fracture in half when compared with eating one serving a week. #Babycarrots today are a breed apart from the original product, which were peeled and reshaped from broken or misshapen larger carrots. California carrot farmer Mike Yurosek was the entrepreneur in the 1980s who reshaped the way you think about #carrots.

As Yurosek’s method of peeling and reshaping has evolved over the years, the popularity of the product has grown. Today, farmers produce hybrid carrots designed to meet the needs of the consumer who wants a fresh out-of-the-bag snack without the hassle of peeling and cleaning. But, does all that convenience come at a price?

Part of the process baby carrots undergo before reaching the grocery store is a chlorine bath. The largest carrot farm, Grimmway Farms, reports that chlorine is used on all their baby carrots to prevent food poisoning. After their chlorine wash they are rinsed, packaged and shipped.

#Chlorine, used to clean and preserve the carrots, is a common chemical found in your water supply, pesticides, paper and plastics. In the last 30 years, a growing body of evidence has suggested that chlorine and by-products trigger significant negative health conditions.

It isn’t the chlorine that causes the problems, but rather the disinfection byproducts (DBPs) produced when chlorine interacts with organic matter. These byproducts are far more toxic than the chlorine, including trihalomethanes and haloacetic acids. In this instance, the term organic is used to mean a compound that is carbon-based.

This means these byproducts are produced in all carrots, whether toxic pesticides were used in the growing process or not. Long-term risks of exposure to DBPs include excessive free radical formation, which accelerates aging and vulnerability to gene mutation and cancer. More than 600 DBPs have been discovered, some of which are linked to liver malfunction, arteriosclerotic damage and neurodegenerative changes.

Scientists are only beginning to understand the long- and short-term impact of chlorine-based chemicals. The healthiest option is to buy whole, unprocessed carrots — Ideally

As with most places, Russia too noticed a remarkable increase in cancer rates during the 19th century. Soviet researchers looked at cancer rates by region and noticed certain geographical areas of the Soviet block were practically immune to cancer while other areas seemed to be suffering from a cancer epidemic. The US study, which examined evidence from 131,342 men and women, recommended that substituting three per cent of animal protein for plant protein reduced risk of death from all causes.

Researchers concluded: “"Substitution of plant protein for animal #protein, especially from processed red meat, may confer substantial health benefit. "Therefore public health recommendations should focus on improvement of protein sources." “Fats in our diet are metabolised in the body into 'local hormones' known as prostaglandins. “Depending on the type of fat, these local hormones can either increase inflammation or reduce it. “There is evidence that the omega 3 fatty acids reduce it. “In contrast, omega 6 fatty acids are linked to increasing inflammation (ones that are found particularly in red meats and #dairy products).” #uglybynature
