I woke up this morning thinking I needed to roast some lamb and whip up some couscous. I decided to sauté some eggplant and made a dried cranberry and balsamic “chutney” to go with it. I think it works.
Prosciutto wrapped Orange Roughy with lentils. Have to thank @jamieoliver for this one. I substituted Orange Roughy for his Cod and Prosciutto for his Pancetta and added spinach to my lentils (as I always do). Kids lapped it up!
I’ve been freezing ALL day, and feeling less than on top of my mom/marketer game, and when I got home from work tonight I had zero desire to cook for my kids. So, they got Italian meatloaf sammiches for dinner. No one complained.
I’ve been eliminating gluten, because I feel so much better when I don’t consume it. Although I slipped tonight and had a burger on a brioche roll. Back to clean eating, tomorrow. We’re all allowed cheat days right? 🤨
I’ve never been a big fan of New Year’s Eve and I like to quietly accept it by staying in and reflecting on the past year. It’s a quiet, contemplative time for me.
