THEPLA KATHI ROLLS

As we are inching towards some lip smacking food this weekend, there we are rolling out & so are these Thepla Kathi Rolls with creamy paneer filling. 😋

Thepla Kathi Rolls
Serves- 2
Ingredients-
For the thepla-
1 cup wheat flour
1 tsp coriander powder
1 tsp turmeric powder
1 tsp red chilli powder
Salt- as needed
7-8 Fenugreek (methi) leaves
Water – as needed
1 tbsp refined oil
1 tbsp ghee

For the filling-
1 tsp ghee
1 tsp ginger garlic paste
2 tbsp fresh cream
200 gm paneer cubes
1 tsp green chillies, chopped
1 tsp red chilli flakes
1 tsp crushed black pepper
Salt -as needed
Fresh cream
Green chutney
Onion rings
Mint leaves
Lemon
Method-

For the thepla-
In a bowl, add wheat flour, coriander powder, turmeric powder, red chilli powder, salt, fenugreek (methi) leaves and make a dough.
Make roundels & roll out theplas.
In a pan, cook the theplas smeared with ghee on both sides.

For the filling-
Heat a pan and add ghee, ginger garlic paste and sauté well.
Add the chopped green chillies and further sauté
Add the fresh cream and water and cook for 1 minute on medium heat.
Once the cream and mixture comes together, add the paneer and cook until the paneer is coated and hot.
Add the red chilli flakes, crushed black pepper and salt.

Assembling-
Apply green chutney on the theplas
Add the paneer filling and lachcha onions in the theplas and roll them with a foil paper from the
Top it with onions, mint leaves and lemon wedge and serve

Green Chutney
Blend chopped coriander leaves, chopped green chillies & ginger, cumin powder, chaat masala, lemon juice and salt with a little water until smooth.

Sexy Tangdi Kebab

Serves- 3

Ingredients-
6 Chicken legs
Refined oil- for deep frying
Onion rings
Lemon
Green chillies

Marinade
1 tbsp ginger garlic paste
2 tbsp tandoori masala
2 tbsp cornflour
1 tbsp salt
1 tbsp pepper
1 tbsp refined oil

Method-
Wash the chicken very well.
In a plate or bowl add all the ingredients of the marinade.
Add the chicken legs to the bowl or plate and coat well within the marinade.
Keep it in a cool place for the flavours to infuse for 20 mins.
Heat refined oil in a deep pan.
Deep fry the chicken legs and serve hot with onion rings, lemons & green chillies.

Choco Walnut Cake (Eggless)
Ingredients-
Dry Mix
1 ½ cup refined flour
3 tbsp coco powder
¾ tsp baking soda
1 ½ tsp baking powder
Wet Mix
¾ cup butter, melted and cooled
¾ cup water
1 cup condensed milk
1 ½ tsp vanilla essence
For Ganache Frosting
½ cup fresh cream
1 ½ tbsp butter
170 gms cooking chocolate
Garnish
Crushed walnuts
Choco chip

Method-
Dry Mix-
In a large bowl, add refined flour, coco powder, baking soda and baking powder.
And sift the ingredients well to avoid any lumps.
Wet Mix-
In a bowl add melted butter, water, condensed milk and vanilla essence.
Whisk the ingredients well.
Now add the dry mix to the wet mix and mix till it becomes a smooth batter.
It should be of pouring consistency.
Grease a cake tin with butter and refined flour, and pour the cake batter.
Now place the cake tin inside a pre-heated oven at 180 degree C.
Bake it for 20-25 minutes (180 degree C), or until a tooth pick when inserted comes out clean from the centre.
Remove the cake from the oven and let it cool.
Ganache-
Add fresh cream and butter in a pan and turn the heat on medium, bring the mixture to a simmer.
Add cooking chocolate and mix well.
Take the cake out of the tin, and pour the ganache evenly.
Add crushed walnuts and choco chips.
Slice and serve.

Tikki Chaat Cups

Serves- 3

Ingredients

3 potatoes, boiled and mashed
1/3 cup bread crumbs
1 tsp red chilli powder
1 tsp chaat masala powder
Salt - to taste
1/2 tbsp coriander Leaves , finely chopped
1 tsp lemon juice
Refined oil- for deep frying
Onions, chopped- as needed
Curd- as needed
2 tbsp sweet chutney (a blend of dates, tamarind & jaggery)
2 tbsp green chutney
1/4 cup plain sev
Fresh mint leaves- as needed

Method-

In a bowl, add boiled & mashed potatoes, bread crumbs, red chilli powder, chaat masala powder, salt, chopped coriander, lemon juice and mix well.
Make little mini tikkis with the potato mixture and deep fry them in hot oil till golden brown.
Add the hot mini tikkis in paper cups.
Add chopped onions, curd, sweet chutney, green chutney, plain sev on top as needed.
Garnish with fresh mint leaves and serve.

Rose Falooda

Serves- 1
Ingredients-
Milk – 2 cups
5 tbsp Rose syrup
1 tsp (sabja/basil seeds)
½ cup Falooda noodles
5 Pistachios, chopped
5 Almonds, chopped
2 scoops Vanilla ice cream

Method-
Bring milk to boil and simmer till it reduces to 1 1/2 cups.
Turn off flame and bring to room temperature. Chill until use.
Cook the falooda noodles and place it in cold water and refrigerate until use.
Soak falooda seeds in water for 30 mts and allow to bloom. Set aside.
To assemble falooda:
Take the serving glass and add a generous tbsp of rose syrup.
Add the bloomed basil seeds/sabza.
Next layer with falooda noodles.
Slowly pour the chilled milk till 3/4th of the glass.
Add the rose syrup.
Next add two scoops of vanilla ice cream on top. Garnish with chopped nuts. Serve chilled!

Raita 3 ways

Ingredients-

Carrot Raita

½ cup grated carrots
1 cup curd (whisk the curd to avoid lumps)
1/2 tsp black salt
1/2 tsp red chilli powder

Method-

In a bowl, add grated carrots, curd, black salt, red chilli powder.
Mix well, garnish with grated carrots & serve.

Chilli Garlic Raita

3-4 green chillies
2 tbsp garlic, chopped
1 cup curd (whisk the curd to avoid lumps)
1-2 tbsp coriander, chopped
Salt to taste

Method-
Slit green chillies, deseed and chop them.
In a pan, add the chopped green chillies, chopped garlic and saute well.
Add the sauteed chilli garlic mixture, chopped coriander to a bowl of curd and mix well.
Garnish with the remaining mixture, chopped coriander and serve.

Tadka Raita

1 tbsp refined oil
½ tsp mustard seeds
2-3 dry red chillies
1 cup curd (whisk the curd to avoid lumps)
Salt to taste

Method-
In a pan, add refined oil, mustard seeds, dry red chillies and let them splutter.
Add the spices to a bowl of curd with a pinch of salt and serve.

KHATTA MEETHA SALAD

Serves- 2-3

Ingredients –
Pumpkin cut into squares (atleast 1 ½ inch thick) - 10
Oil – 2 tsp
Crushed black pepper – 1 tsp
Bengali five sice coarse powder (paanch phoron/5 spice- mix of cumin seeds (jeera) , fennel seeds (saunf), fenugreek seeds (methi) , black mustard seeds (rai) and nigella seeds (kalongi)) – 2 tsp
Sea salt – 1 pinch
Grated raw papaya – 1 cup
Orange segments – 1 cup
Sugar – 1 pinch
Lemon-1
Black salt – a pinch
Mint leaves– 7-8 nos
Red chili powder – 1 tsp

Method –
To make crispies - cut pumpkin into squares, add some oil, Bengali five spice powder, sea salt, black pepper and rub it in the pumpkin well.
Take a baking tray with butter paper and place the spiced pumpkin squares on it.
Pre-heat the oven at 220 degree C
Lower the temperature to 170 degree C and bake the pumpkin for at least 20-30 mins or till they are nice and crisp.
While the pumpkin squares are in the oven, take a bowl & add grated raw papaya.
Into this, add chopped mint leaves, orange segments, black salt, pinch of sugar and lemon juice. Mix and keep aside.
Add the tossed salad on the crispy pumpkin squares.
Add mint leaves & red chilli powder on top and serve.
