Recipe -
Tamatar Bharta
Serves- 2
Ingredients-
4 tomatoes
Mustard oil- for greasing & cooking
1 onion, finely chopped
2 tbsp garlic, finely chopped
1 tbsp ginger, finely chopped
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp dry mango powder (amchur)
1 bunch fresh coriander, finely chopped
Salt- to taste
Water- as needed
1 bowl ice cold water

Method-
Apply mustard oil on the surface of the tomatoes and roast them over the pan, till their outer surface turns blackish and flaky.
Immerse them in ice cold water.
Peel off the burnt skin of the roasted tomatoes and chop them.
Heat mustard oil in a pan and add finely chopped onion, ginger, garlic and mix well.
Add turmeric powder, red chilli powder, dry mango powder. Sprinkle some water and mix well.
Add the chopped roasted tomatoes, salt and mix well in the pan. (It should be chunky)
Garnish with fresh coriander and lemon juice.
Serve with dal rice, khichdi, chapati, parathas, roti etc.

Recipe -
Idli Kebabs
Serves-2 -3
Ingredients-
4 idlis (regular sized)
1 tbsp gun powder (toasted peanuts, coriander seeds, dry red chillies, red chilli powder ground together. Salt can be added later)
Refined oil- as needed
½ tsp mustard seeds
6-7 curry leaves
1/2 onion, finely chopped
1/2 tsp garlic, finely chopped
1/2 tsp ginger, finely chopped
1 tbsp refined flour (maida)
Salt- to taste

Method-
Grind toasted peanuts, coriander seeds, dry red chillies, red chilli powder to make gunpowder and keep aside.
Mash the idlis to form a coarse dough like consistency
In a pan heat refined oil, add the mustard seeds and curry leaves.
Once it splutters, add finely chopped onions, ginger, garlic and saute for a minute.
Add the mixture in the bowl of mashed idlis and mix well.
Add gunpowder, salt, refined flour and mix well.
Roll the idli mix in the form of kebabs.
Shallow fry these kebabs in refined oil until it gets some colour and some char marks.
Serve hot with green chutney.

Green Chutney
Blend chopped coriander leaves, chopped green chillies & ginger, cumin powder, chaat masala, lemon juice and salt with a little water until smooth.

Recipe -
Kerala Chicken Sandwich

Serves- 1-2

Ingredients-

400 gms boneless chicken
For marination-
2 tbsp pepper & fennel powder (mix)
1 tsp turmeric powder
Salt- to taste
½ lemon juice
For the filling-
2 tbsp refined oil/coconut oil- as per taste
1-2 onions, sliced
2 green chillies, slit
1 tsp garlic, finely chopped
1 tsp ginger, finely chopped
1 tsp coriander powder
1 tsp turmeric powder
½ tsp red chilli powder
1 tsp garam masala
½ tsp black pepper powder
1 tbsp water-for the spices to cook
1 tbsp vinegar
1 sprig fresh curry leaves
1 tbsp crushed black pepper
2 tbsp coconut, shredded
For the sandwich-
2 homemade parathas
1 half fried egg

Method-

Marinate chicken for 10 minutes with lemon juice, turmeric powder, pepper powder,
and salt. Keep this aside while we make the masala for the filling
Heat a pan with coconut oil. Add in the sliced onions and green chilies. Let it sauté on
medium heat till light brown (3-4 mins).
Add finely chopped ginger and garlic, mix well for a minute. Add red chili powder,
coriander powder, garam masala, and turmeric powder. Mix well add salt if needed.
Add in the marinated chicken. Mix well, add vinegar, cover and cook. If there is water
allow it to evaporate.
Open, and add in the coarsely grinded pepper powder and mix well.
Let the chicken dry roast on low flame for another 5 minutes or until it becomes blackish
brown in color. Make sure that you stir/mix it well, so that it does not stick to the
bottom of the pan.
Lastly sprinkle curry leaves, crushed black pepper and shredded coconut and give a nice
stir.

For the Sandwich-

Layer one paratha with the cooked chicken.
Cover it with another paratha, top with a half fried egg and serve.

Recipe -
Cheesy Onion Bhajiya
Serves- 2-3
Ingredients-
1 cup chickpea flour (besan)
1/3 cup rice flour
½ tsp carom seeds (ajwain)
1/3 tsp crushed coriander seeds
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp refined oil- for the batter
3 onions, sliced
3 green chillies, chopped
Coriander leaves, finely chopped
5-6 curry leaves
Salt- to taste
Refined oil for deep frying
Water- as needed
4-5 medium cheese cubes

Method-
In a bowl, add chickpea flour(besan), rice flour, carom seeds (ajwain), crushed coriander seeds, red chilli powder, turmeric powder, refined oil, sliced onions, green chillies, chopped coriander, curry leaves, salt and mix well.
Add water and make a thick batter.
Insert cheese cubes in the batter, coat the cheese cubes well.
Deep fry until golden brown.
Take them out on an absorbent paper to remove excess oil.
Serve hot with any dip of your choice.

Recipe -
Thandai- 2 ways
Serves- 3-4 (2 tbsp of thandai mixture)
Ingredients
20 pistachios
1 tbsp chironji
4 tbsp melon seeds
20 almonds
1-2 green cardamom
1 tsp fennel seeds (saunf)
4-6 peppercorns
½ tbsp poppy seeds (khus khus)
Few strands of saffron
1 tsp rose water
8-10 rose petals
Sugar- as needed
500 ml chilled milk

Method-
Grind all of them and store in an airtight container.
Use the thandai mixture and mix well with chilled milk and sugar as needed.
Add ice cubes and serve chilled

For thandai cubes
Pour the thandai in an ice tray and set it in the freezer.
Once set, serve frozen.

Recipe -
Paneer Makhani Sizzler
INGREDIENTS
2 tbsp ghee
1 large onion, thinly sliced
1 ½ tsp ginger garlic paste
1 cup tomatoes, chopped
1½ tsp cumin powder
1 tsp red chilli powder (degi mirch)
½ tsp garam masala
1½ tbsp coriander powder
Salt- to taste
1/4th cup water
200 gms Paneer cubes
½ cup fresh cream
¼ tsp dried fenugreek leaves (kasoori methi)
1/2 tbsp butter
For Sizzler
1/2 cup Cooked Green Beans. boiled
1/2 cup Carrot cooked boiled
2 – 4 florets of cauliflower, boiled
½ cup Pulav Rice
2 Roasted Tomato
6-8 French fries
1 tbsp butter
METHOD
· Heat the ghee in a heavy bottom pot over medium heat.
· Add the sliced onions and sauté until they turn translucent and start to sweat, about 5-7 minutes, don't allow the onions to brown.
· Add ginger garlic paste, chopped tomatoes, cumin powder, red chilli powder, garam masala, coriander powder, salt and continue to cook for 5 mins.
· If the mixture starts bubbling rapidly, add about ¼ cup of water and continue to cook.
· Remove from heat, add the mixture to a blender and blend until smooth, you may or may not need a few tablespoons of water to help it blend.
· Add the blend back to the pan.
· Add the paneer cubes.
· Add fresh cream, dried fenugreek leaves (kasoori methi) and mix well.

For Sizzler
· Heat the Small nonstick pan to the Max.
· Assemble the vegetables in one side of the pan.
· Place rice in the centre.
· Place French fries and roasted tomato on the other side.
· Finally pour the paneer makhani
· Add butter and serve hot.

Recipe -
Rusk Open Sandwiches
Serves- 6
Ingredients-

1. Rusk, Mayonnaise, Tomato, Coriander , Salt, Black pepper.
2. Rusk, Hung Curd, Cucumber, Fresh mint, Salt , Crushed black pepper.
3. Rusk, Cheese spread, Blanched spinach, Boiled corn, Salt, Crushed black pepper.
4. Rusk, Green chutney, Boiled beetroot, Boiled potato, Salt, Crushed black pepper.
5. Rusk, Green Pea paste, Sliced boiled egg, Salt, Crushed black pepper.
6. Rusk, Rabdi, Sliced Gulab Jamun, Boondi.

Method-
1. Spread mayonnaise and add sliced tomato, coriander on a rusk. Season with salt, pepper and serve.
2. Spread hung curd and add a cucumber slice, fresh mint on a rusk. Season with salt, crushed black pepper and serve.
3. Apply cheese spread and add blanched spinach, boiled corn on a rusk. Season with salt, crushed black pepper and serve.
4. Spread green chutney and add boiled beetroot, boiled potato on a rusk. Season with salt, crushed black pepper and serve.
5. Spread green pea paste and add boiled egg slices on a rusk. Season with salt, crushed black pepper and serve.
6. Spread rabdi generously on a rusk. Add sliced gulab jamun, boondi and serve.
