Mushroom Malai Shorba
Serves- 1 by 2
Ingredients-
2 cups fresh mushrooms, sliced
2 tbsp onions, chopped
1 -2 garlic clove, chopped
1/2 tsp shahi jeera powder
2 tbsp butter
2 -3 tbsp refined flour
1 cup vegetable stock
1 tbsp fresh cream
1⁄2 tsp salt
1⁄4 tsp black pepper
1⁄4 tsp garam masala

Fresh coriander – for garnish
Fresh cream- for garnish

Method-
Cut the mushrooms into slices.
In a pan, add oil & melt butter.
Add chopped onions, chopped garlic and cook until onions are soft
Add mushrooms, shahi jeera powder, garam masala & mix well.
Add refined flour and mix well.
Blend the cooked mixture into a fine puree.
Add the puree back to the pan.
Add in the vegetable stock and heat until slightly thickened while stirring frequently.
Stir salt, black pepper & fresh cream into soup.
Heat to thicken while stirring frequently.
Garnish with fresh cream & coriander leaves.
Serve hot.

Stuffed Mirch ka Dal
Serves- 2-3
Ingredients
For stuffed green chilli
Bhavnagri Green chilies – 5-8
Gram flour - 1/4 cup
Oil - 4 tbsp
Hing - 2 pinch
Jeera - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Fennel powder - 1 tsp
Garam masala - 1/4 to 1/2 tsp
Mango powder - 1/2 tsp
Salt as per taste
For Dal
2 tsp - Ghee
1 tsp - Cumin seeds
1/4 tsp - Hing
1/2 cup moong dal
1 green chilli, slit lengthwise
1/2 tsp - Turmeric powder
Salt as per taste
1cup – water
METHOD
For stuffed Chilli
Lengthwise make a slit on the chillies keeping it joined at other side.
Preheat 2 tbsp oil in a kadai and add asafoetida(hing), cumin seeds and saute for some time.
Add turmeric powder and gram flour. Saute on low flame until gram flour turns darker in color.
Now add coriander powder, fennel powder and saute for few more minutes.
Take it off the heat and add mango powder, garam masala and salt in the masala.
Stuff the slit chilies with this masala.
For the Dal
Wash and soak moong dal, in 2 cups of water, for half an hour. Drain out the water.
Heat oil / ghee in a pressure cooker, on a low heat. Add jeera (cumin seeds) and fry on a low heat, until fragrant and light brown in colour.
Add hing and stir well, on low heat.
Add drained moong dal and fry, for 2 - 3 minutes.
Add green chilli and turmeric powder. Stir well for 2 - 3 minutes.
Add salt to taste and 250 ml water (1.25 cups). Close the pressure cooker and cook on high heat, for 3 whistles.
Switch off the heat. Allow the cooker, to cool naturally.
Open the lid and gently mash the boiled hing dal.
Heat ghee in a pan, place the stuffed chilies in pan and cover. Cook for 2 to 3 minutes on low flame. Open the lid and flip the side of chilies.
Add this to the Dal and serve hot.

Boondi Vanilla Cake

Serves- 6-8

Ingredients –

For boondi-
Gram flour (Besan) – 1 packet (for yellow & orange boondi- 2 cups each)
Orange food color- 1 tsp
Water-as required

For sugar syrup-
Sugar – 2 cups
Water- 2-3 cups

For assembling-
Vanilla sponge cake (round) – 2
Whipping cream – 1 pack
Grated chocolate – 1 cup

Method –

Take two separate bowls & make two batter for boondis:
Plain mix- add gram flour (besan) & water for yellow boondi
Food colour mix- add gram flour (besan), water & orange food colour for orange boondi
Using a perforated ladle, drop each mix separately into hot oil.
Once the boondis are fried, remove them from oil on a plate with absorbent paper.
Make sugar syrup using sugar and water in a pan and let it thicken.
Soak the boondis in the sugar syrup.
After soaking, remove and keep them aside.
Whisk the whipping cream in a bowl till it shows peaks.
Now slice the vanilla sponge cakes into halves.
Use three layers for assembling.
Soak each half with some sugar syrup previously made.
Put whipped cream and both yellow & orange boondis
Place the layers together and repeat the step.
Add the whipped cream evenly from all sides.
Decorate with boondi and grated chocolate.
Slice & serve!

Baked Aloo Methi Full Recipe:

Serves- 4-5

Ingredients-

For the potato shells-
Potatoes (medium sized) – 5
Oil- 1 tbsp
Sea salt –to taste
Crushed black pepper- 1-2 tsp

For the filling-
Oil- 2 tbsp
Butter – 1 tbsp
Slit green chillies- 2 nos
Boiled potatoes- 1 cup
Turmeric powder– 1 tsp
Red chilli powder – 1tsp
Cumin powder- 1 tsp
Fenugreek (methi) leaves- 1 bunch
Salt- to taste
Mozzarella cheese (grated) – 1 cup
Red chilli flakes- 1-2 tsp
Crushed black pepper- 1 tsp

Method –

In a bowl, add potatoes (with skin), oil, sea salt, crushed black pepper & mix well.
Place them in a baking tray with butter paper.
Bake the potatoes at 180 degree C for 15-20 mins.
Let them cool.
Now scoop out the potatoes leaving the base intact. Keep it aside.
In a pan, heat some oil & butter.
Add the slit green chilies, boiled potatoes & toss well.
Add turmeric powder, red chilli powder, cumin powder, fenugreek (methi) leaves, salt & cook.
Once the fenugreek (methi) leaves have left water, it’s ready. Keep aside.
Put this filling in the baked potato shells.
Add grated mozzarella cheese, crushed black pepper & red chilli flakes on top.
Bake at 180 degree C till the cheese melts.
Serve hot with any dip.

Kaapi Kick
Serves- 2-3
Ingredients
2 tbsp Coffee
1/4 cup Milk
1/3 cup Cream
90 ml Old Monk Rum
4 tbsp gm Sugar
Ice 10-20 cubes/crushed ice
Method
β€’ Heat a Pan and add diluted coffee and sugar.
β€’ Stir until the sugar melts and keep it aside
β€’ Add ice cubes to the cocktail shaker.
β€’ Add the coffee mix, milk, cream, old monk (90ml).
β€’ Shake well and put over crushed ice in a cocktail glass.
β€’ Top it with foam and sprinkle coffee powder on it and serve chilled.

Tandoori Chicken Melt
Ingredients-
6 pieces Boneless tandoori chicken
Bread white slices
Mixed peppers (red, yellow and green capsicum)
1 onion sliced
1 tomato, juliennes
Salt to taste
Cheese slices
Mozzarella cheese, shredded
1 Green chilli, chopped
Chaat masala
Lemon juice
Butter
1 tsp refined oil
Mint leaves to garnish
Method-
1. In a bowl add sliced onion, tomatoes, peppers and green chili.
2. Add some chaat masala, salt, lemon juice and toss the salad well.
3. Heat the pan with butter and place the bread slices in it.
4. Top the slices with the salad prepared.
5. Now, add shredded tandoori chicken on the salad.
6. Top with cheese slice and grated mozzarella.
7. Cover the pan with a lid and cook for some time.
8. Once the cheese melts, the dish is ready.
9. Serve with ketchup or chutney and garnish it with mint leaves.

Soya Cheese Kachori Recipe:

Serves-2-4

Ingredients –
For the dough-
Maida - 2 cups
Ghee – 2 tbsp
Salt to taste
Chilled water- 1 cup
For the filling-
Oil- 2 tbsp
Chopped onions- 2
Ginger garlic paste- 1 tbsp
Green chilli paste- as per taste
Curd- 1 tbsp
Garam masala powder– 1 tsp
Amchur powder- 1 tsp
Turmeric powder- 1 tsp
Red chilli powder- 1 tsp
Cumin powder- 1 tsp
Soya granules – 1 cup (boiled)
Salt – to taste
Water- 1/2 cup
Cheese mix (grated mozzarella & processed cheese)- 1 cup
Oil to deep fry

For garnish-
Mint chutney
Onion rings
Lemon wedges

Method –

1) Mix refined flour and salt in a bowl & add ghee and rub it in with fingertips until the mixture resembles breadcrumbs.
Add enough chilled water and knead into a soft dough.
Cover with a damp cloth and keep aside for 1⁄2 hour.
Heat oil and add chopped onions. Saute till light brown.
Add ginger garlic paste, green chilli paste, curd, garam masala, amchur powder (Dry mango powder) , turmeric powder, red chilli powder, cumin powder and cook the spices.
Add boiled soya granules and saute till the kheema turns brown
Add salt & water.
2) Uncover and continue to cook till all the water is absorbed. Keep aside to cool.
Divide the dough into roundels.
Flatten each portion on the palm of your hand. Add the cheese mix (grated mozarella & processed cheese) & then one portion of filling in the center.
Add the cheese mix on top and bring in the sides of the dough to cover the filling completely.
Pinch the seams till properly sealed.
Cover with a damp cloth and keep aside for 15 mins.
Heat oil till it smokes. Lower the heat and slip in the kachoris & fry until golden & the crust turns crisp.
Drain the excess oil on an absorbent paper.
Serve hot with mint chutney, onion rings & lemon wedges.
